A Dream Built on Puerto Rican Tradition
Before opening El Pilón Criollo, Zury Brown worked for the Rochester City School District while continuing to do what she had always loved most—cook for family, friends, and community events.
Over the years, her Puerto Rican dishes became popular at local gatherings, including Rochester's Puerto Rican Festival, where many people encouraged her to consider opening a restaurant of her own. Their encouragement, combined with her dream of becoming her own boss, gave her the confidence to pursue a restaurant of her own.
When she noticed a restaurant for sale, she decided to take the opportunity. With support from her community and the financing needed to make her vision possible, Zury opened El Pilón Criollo in 2008. Five years later, in 2013, the restaurant moved to its current location on North Clinton Avenue, where it continues serving customers today.
Looking back, Zury still remembers one moment above all others—the day she stood outside the restaurant and cut the ribbon to officially open El Pilón Criollo. It remains one of the proudest memories of her journey as a business owner.
A Restaurant Named After Family
One of the most meaningful parts of El Pilón Criollo isn't found on the menu—it's found in the restaurant's name.
Inside the dining room hangs a portrait of Zury's grandmother, whose cooking helped inspire generations of family meals. She prepared many traditional Puerto Rican recipes using a pilón, the wooden mortar and pestle that has long been a symbol of Caribbean cooking.
For Zury, naming the restaurant El Pilón Criollo was a way to honor those memories and preserve the traditions she grew up with. The pilón represents more than a kitchen tool—it represents family, heritage, and recipes passed from one generation to the next.

Looking toward the future, Zury hopes to see the next generation continue that tradition. One of her daughters has already expressed interest in one day expanding the family business with another location and a food truck, continuing the legacy her family has built since 2008.
